Today there weren’t any pictures taken by me, instead my mother and I accompanied my cousin and just one of her photographers to an amazing retail outlet mall in the neighboring state of New Jersey. Actually beyond the the additional views of the gorgeous New York CIty skyline, this little excursion to an American mall was a great opportunity for them to see another part of what America is; our shopping preferences, our food courts, what an outlet mall is all about, getting great deals on Brand names that otherwise be beyond our means, things of that nature that often get missed during a tourist’s visit.

I had to bring them to IHOP, International House of Pancakes, because as I said to them; you haven’t lived until you have had pancakes at a IHOP. They were very excited for lunch; so after a few hours of hardcore shopping, we drove to the IHOP and all four of us each ordered the 2x2x2: two eggs, two links of sausage or bacon and two buttermilk pancakes. I can honestly say that each plate was sparkly clean; we were famished form shopping and it was really delicious.

Tomorrow there will be pictures, just not sure of what and how many, but there will be visuals.

Pancakes for dinner

On the way down to Virginia, somehow in our rush to get ready, pack the car and just get on the road. I forgot to eat lunch. Driving down through Connecticut, New York and then New Jersey; my stomach didn’t even growl once. It wasn’t until we hit sundown and snow started to fall in Delaware, and driving got harder, that my tummy started to rumble. My hubby talked into his phone; summoning Siri, asking her where the nearest IHOP was located. The nearest International House of Pancakes was perfectly located just 3 miles off I-95; easy on, easy off. We pulled in and we both ordered a small stack with coffee. There are those times when pancakes just seem to hit the perfect spot; a pat of butter on top that I split into small pieces and applied those little pieces on each of the five layers of pancake and then, of course, a boatload of maple syrup; not the pure stuff from Canada, no, the thick sugary sweet stuff that you find in the supermarket. My throat is always irritated and for the few minutes that I eat pancakes loaded with the sweet syrup, the soft pancake swaddled in syrup just glides down my throat and makes it feel so much better. It was a very satisfying dinner, especially with the snowfall and the cold. The pancakes with the coffee, really hit the spot.

There are some days where a craving hits you and today a craving hit my hubby and he indulged himself by actually heeding the craving. Pancakes were on the menu for Sunday brunch today at the Nichols household. The baby girl was very happy; anytime pancakes are made with chocolate chips sprinkled in, that is some good eats. My hubby is the pancake master, he has been making pancakes for us as a family for the entire life of our marriage, so over twenty years and he is excellent at it. His pancakes come out light and fluffy as well as very pretty so that your eyes are delighted in tandem with your tastebuds.

I prefer to make crepes; I still have a ways to go before I get them perfect every time but it will happen one of these days. Practice makes perfect and perfection takes practice. However the mistakes are an enjoyable pathway to perfection.
