This Easter is a nice quiet one, our daughter is working today getting time and a half, so it only us, our son and the dogs. Since we have all been very busy, my husband and I driving here and there and everywhere and our kids working, the menu was decided very quickly and easily, by my husband I think, Eggs Benedict for the meal and chocolate for dessert.

   

   

My husband is the king of the Eggs Bendict and I don’t say this lightly. Our son would probably name Eggs Benedict is one of his most favorite foods and he has eaten them at the best restaurants and hotels and he says that his Papa’s are the best that he has ever eaten. I agree with my son because not only were they divine today, my husband has made them this way consistently for years now. There is something about the combination of the hot thick egg yolks, the zesty thick almost custard like Hollandaise sauce, the savory Canadian bacon and the nice chewiness of the English muffin that makes the taste buds sing in pleasure.

I have to say that watching my husband put the Eggs Bendict together for myself, our son and himself, is akin to watching a master at work because every movement is precise and efficient. I have made Eggs Benedict in the past and it can go south quite easily; between overcooking the eggs, curdling the Hollandaise Sauce or even burning the Candian bacon, anything can happen. My husband makes it look so easy and that is what makes him the master.

Now I will wait for my stomach to do its job and then I think that I will have some chocolates.

I am wishing everyone a very Happy Easter! It is late and I am tired from driving all the way from my sister’s house in Westchester, New York down to Herndon Virginia. We had a fantastic meal of steamed artichokes with my mother’s vinaigrette followed by butterflied leg of lamb on the barbecue, roasted fingerling potatoes, flageolets simmered in chicken broth, after having had shallots and garlic sautéed with diced prosciutto to give the beans added flavor, finally we got to the salad and then it was the piece de resistance, le Saint Honore:

My mother, my sister and my brother-in-law, all of them, outdid themselves with this fine feast. But besides the food, our favorite part of visiting is to spend time with the little ones; my niece and nephew. Their eyes lit up at dessert time; the cake and the Lindt chocolates were a lot more fun to eat then the beans, at least in my opinion.

I am off to bed.

I wish everyone a Happy Easter and I hope that it was a joyous day for all. This morning as I was flipping through Facebook, I posted Happy Easter everyone! Enjoy your ham, enjoy your lamb and most of all, be sure to enjoy your chocolates! What is amusing about my wish for my friends is that for my own Easter dinner there wasn’t any ham or lamb to be found, there wasn’t even any Easter chocolates eaten.

My family enjoyed a small brunch of soft shell crabs meunière with Jasmine rice and asparagus served with a dijon mustard vinaigrette. I forgot to take pictures, they were also devoured quite quickly. The sauce meunière is such an easy sauce to prepare, all it takes is butter that has been browned by whatever you have been sautéing, in this case it was soft shell crab, it could easily be Dover sole or flounder, once the soft shell crab was done being sautéed; I added the juice of a large lemon and voila, the sauce meunière. If I had parsley on hand I would have added it but I forgot to get some, oh well, it was still quite nice especially with the rice. I, myself, ate most of the asparagus. It is one of my favorites, I didn’t forget it this time and they were perfectly crisp, tender. All in all, it was a nice meal and we celebrated Easter Sunday quietly as a family. After which my son graciously agreed to drive his sister back to school.

So now my hubby and I are getting to watch the season’s premiere of Game of Thrones on HBO and later we will watch I think that it’s the season’s finale of the Walking Dead. Perhaps not the most appropriate viewing for a Sunday but these are brilliant shows and I like them a lot.
