I have found a new easy go to recipe for dinner. This is for those salmon lovers out there. I got the recipe from a google search of salmon and mustard sauce and I hit gold! Last week the hubby was in the mood for salmon so I got two salmon fillets, about the same size each. I preheated the oven to 400 degrees F. and put the two fillets in a gratin oven-proof gratin dish, I sprinkled kosher salt, fresh ground pepper, French seafood spices on top of the salmon and put a bit of butter on each fillets and covered the dish with aluminum foil. The dish went into the oven like a letter in the mail, that is a French expression, anyway during this time I put together the sauce.
The sauce is a cinch, two pinches of dill weed, 1/4 cup of sour cream, 3 tablespoons of Dijon mustard, 1 minced clove of garlic and 3 good squeezes of lemon juice, mix that all together and you have your sauce.
At this point, fifteen minutes have passed, I take the dish out of the oven, pull off the aluminum foil and at this moment the salmon is still rare in the middle which is fine for the hubby and the baby girl. This is when the oven gets put on broil and I slather the sauce on top of the salmon for about two minutes. I served the salmon with brown rice and everyone really enjoyed it.
